Zucchini Alfredo

The “cream “ is a bit of avocado, olive oil, lemon and basil. Pistachios replace pine nuts which are so hard to find. Tossed with sun dried tomatoes. The kind in oil.

Hi Blueruth ,

Your Zucchini Alfredo sounds and looks fantastic. I like pistachios, too when it’s possible to get them.😀👍🍝

That looks so good, really tasty and fresh. I've been thinking about getting a spiralizer. How easy are they to use if you have naff joints and can you do quite alot of different recipes with them? Thank you

I have a really small hand spiralizer because I don’t want another appliance. What is naff? The little one isn’t hard but I am guessing the little one is too manual but there are other ways. Use an peeler and slice them thinner is one. That would be great for roasted thin fries. I have only used the gadget for zucchini noodles which you don’t have to cook. I have seen butternut squash pre spiraled in Whole Foods. That sounds yummy!

I have one with a handle, I think anyone could use that.

If you are near a TK Maxx, they often have them cheap. I saw this one yesterday, made of metal - much more than sturdy than the typical plastic ones.
