Hello everyone, hope you have a joyful day so far! π€
Here are all ingredients I gathered to make some healthy gluten free and vegan oatmeal chocolate chips cookies for the holiday weekend in US. (No butter, I replace with coconut oil).
Baking instructions:
1 cup of rolled oats
1 1/4 cup of all purpose flour
1/4 cup of almond flour
1/4 tsp of xanthan gum
1/2 cup of vegan eggs
3/4 cup of coconut oil
1/2 cup of brown sugar
1/2 cup of chocolate chips (you can add more if you like)
Chill mixed dough in the fridge for at least an hour. Bake at 350 F for 20 mins.
I like to have a cup of tea with a cookie.π

I just added my cookies picture in the main post. They are not as moist as typical chocolate cookies but they do taste good with plenty of oats and dark chocolate chips. ππ

They look lovely, definately the best i have seen. I am sure the tea moistened them up nicely π very professional. Yes, tomorrow I will be busy in the kitchen (heavy rain and thunder tomorrow) so ideal to be in the kitchen. I will post them up tomorrow π
I figured all I need is to add a little bit more flour and egg to mix more with the amount of oats I used but the taste is so good with bitter chocolate chips, very mildly sweet. The amount of brown sugar is just right.
If someone likes them a bit crunchy, this is perfect amount used.

Oh yummy, slight tweaking and they will be just right π I was thinking of baking some Caco and Maple Syrup flapjacks as I have got a big bag of oats that need using up, but I doubt I will have time to do those tomorrow. I thnk I will ba able to learn from yoru cookie recipe π

Iβm actually experimenting it right now by adding more of those flour, coconut oil and eggs. I will let you know the update soon.π

Okay I got it now the right amount of flours proportion without being crunchy. I just updated the recipe.ππ
