Barley and Tuna Salad

I didn’t want to go to the shop today so was looking in the fridge and pantry to see what I could come up with.

I cooked up some barley and added a small tin of tuna, some roasted pumpkin, broccoli, grated carrots, corn kernels, red onion, coriander, slivered almonds and dried cranberries.

It was very tasty and there’s enough for lunch tomorrow too.

Never be afraid to experiment and throw different ingredients together. 😉
