Hi everyone,
I thought I'd try some gluten free vegan pancakes, I made these with 1/2 gram flour 1/2 plain white gf flour and the same amount of creamy tinned coconut milk (I used a measuring jug) blended it, then left it in the fridge to thicken.
Then I thought that I'd have one for supper with lemon and a little brown sugar and I'm very pleased with it as its easy and tasty.
I had to test the mix obviously...and we might as well enjoy pancake day as everything else is on hold...🌈😊

Hi Jerry thanks for reminding me we're going to Morrisons today as it's now 3.5o morning 😴🌛pixies just snuggled back after his biscuit snack,hoping to get some fresh cod,haddock for home made fish n chips lol, so can make some pancakes with the batter before the bicarb goes in the only way I like pancakes is with lemon and a tiny bit sugar,hope you have good day I had nice little walk sun out a bit just going down but in the slodhy mud as too many on the paths, it's strange but I almost forgot about the virus and been feeling more relaxed about it, I can only think it's as mam's had her vaccine now 3 half weeks ago,but I did get panicy when lot people were coming towards me I put my scarfe over and just had to go on the mud,the boots will need to go in the bin lol as my socks were muddy ☹️😊shame as comfy,and I've just noticed your doing photos on here now,enjoy your pancake cake 😁back to sleep now hopefully 😴🛌

Looks lovely!! I've made plenty of GF pancakes in my time, but don't usually make them vegan, except when I make dosas. Love the idea of the gram flour and coconut milk, will keep that in mind for supper ideas when I make veg curries and don't want rice of chapatis!
