Hi everyone,
I thought I'd try some gluten free vegan pancakes, I made these with 1/2 gram flour 1/2 plain white gf flour and the same amount of creamy tinned coconut milk (I used a measuring jug) blended it, then left it in the fridge to thicken.
Then I thought that I'd have one for supper with lemon and a little brown sugar and I'm very pleased with it as its easy and tasty.
I had to test the mix obviously...and we might as well enjoy pancake day as everything else is on hold...ππ
