This seems to be all about scaremongering, it's a pretty poor piece of journalism, that I fear could put people off eating gluten as a precautionary measure.If people think they may have this, or an intolerance to gluten, they should always see their doctor and ask to be tested for Coeliac disease before removing gluten from their diet.
Ataxia is very rare, but if people are experiencing clumsiness, they should also see their GP to be tested for other issues (such as B12 deficiency).
Hi Hidden I think that there are two things here one we have dwarf wheat that is very high in gluten compared to wheats of a few years ago and this combined with supermarkets wanting to woo shoppers with the smell of freshly baked bread are the main reasons so many more people are having issues with gluten. When supermarkets bake bread they add lots of additives so the it rises between 30 and 90 seconds so the bread batter goes into a loaf tin and they trundle down a conveyor belt and bake. One of the additives is phytic acid which's what we have to wash and soak out of soy and legumes so that we can digest them!
So these additives may make make the bread rise super fast but at a cost...
