I thought I'd have a treat this afternoon and with the Royal wedding and sunny weather made a strawberry flan with a gf biscuit base using ground almonds, quinoa flour and sesame seeds.
And the topping I made by stewing 6 strawberries in some water with chia seeds to make a natural and healthy jelly. I let the biscuit base cool down spread some halved strawberries on it covered it in the jelly and added a few more cut strawberries, and left it in the fridge until I just had to test it...with some soy cream.
I really like treats like this as they pack a nutritional punch and hit the mark for me and the strawberry jelly was a great success.
That looks delicious. I wish I could try it. I havenโt got past wanting some of that apple slice you made yet and now I want this. I think I need to go food shopping and make my own. Do you do deliveries ๐ฒ.......
Wow, that looks gorgeous! Just the thing for a Royal Wedding treat. I also had a Strawberry tart today - but I didn't make it myself... But I enjoyed it.
That sounds splendid. The strawberry/chia jello fixation is inspired. I am going to try that. Pretty sure even a small piece o this would take me out of ketosis though, so will have to test it on kids or time being.
Thanks Rignold, I've been experimenting with adding chia seeds to stewed fruit so hoped it would work. Your kids won't be disappointed as it beats using a jelly or jam...๐
