An 'odd' but very Tasty piece of Ham

Dear FF's (that's 'Fellow Foodies'),

Since I'm effectively back in 'Isolation' again, I DARE NOT 'Risk' catching COVID- I have, once again, asked a 'Volunteer' to do my shopping. This is actually someone my Mother uses, she is Happy to 'do' us both. One 'thing' I did ask for, for a Change, was a piece of 'Boiling' ham/bacon.

When it arrived, this afternoon, it was BOTH a 'Boiling' AND 'Roasting' joint..... Yes you literally Boiled it, prior to Roasting! The Boiling Time, you had to calculate- based on it's weight- then there was the Roasting Time- of Fourty Minutes. Doing the 'Maths', I found out that it was Pretty Much the Same Time, for each. 'Oh well here goes' I thought.....

I Boiled it, starting from cold, removing the 'Scum' after a few minutes. After twenty minutes I 'turned' the meat, before giving another twenty minutes. At this point I also turned on the Oven. After a further twenty minutes I removed the Bacon, before placing it into a collinder- to catch any 'drips'. I the mean time I got a suitable Roasting Tin, out of the cupboard. Next I put the Meat, into the Tin, and put it into the oven. I turned this, again after twenty minutes- slightly 'upping' the heat at this point.

Finally I removed the Ham, from the oven, and 'Rested' it.... whilst I seved the Vegetables (I had put on earlier.... forgot to mention them, Sorry). I carved the meat, made some gravy- from the juices- and served up. It was Beautiful, Lovely flavour(s)- I'll probably use the rest as Ham, it's 'plenty good enough'.

I just though that I'd 'Share' my 'Discovery'.... It's Well Worth 'a go', if you ever come across this.

Hi Andrew,

That's more or less what I do with a joint of ham/ bacon, although sometimes I put a Honey/ mustard glaze on before the roasting part. I have also tried a Maple syrup glaze too, which was quite nice if you like Maple flavour.

Cheers, Midori

Dear Midori,

I do, quite like, Maple but.... it's not 'that common', our side of The Pond. You can buy it, but mainly from the more ' Specialist' outlets.

Honey, or Honey & Mustard, yes I will definitely try- I'll add it, as you suggest, durng the 'Roasting' stage. Perhaps I'll try some other Herbs, maybe Rosemary, or Sage...even Tarragon or Fennel. Thses actually grow, in our climate, unlike Origarno and Dill, which, I believe, are imported. I think that I'm F(l)avouring 'Honey & Mustard', at the moment though.

Tonight is, highly likely, to be a 'Delivery'- probably a Chinese- a local one know me well....

Morrisons have their own version "The Best" Canadian Maple Syrup. When first being told to shield by NHS I had difficulty getting deliveries so had to go to the shops. After a few weeks everything settled down and I've had no problems since getting deliveries from Morrisons or Iceland if you have either local to you. Easy to shop too when the website remembers your standard favourites, and also gives you a list of things you've ordered previously before checkout, which is useful when I've forgotten to add something. I bought an annual delivery pass which has been worth every penny. Re the ham joint, I remember when was first married, I didnt realise you had to boil it first before roasting and it went straight in the oven. My sister in law who I'd invited for lunch was very polite but we both knew it was far too salty without the boiling and practically inedible. Delicious when done properly!
