Since we have been having a lot of hot temperatures lately, I decided to have a homemade big salad. The salad had dried cranberries, black and green olives, sliced white mushrooms, creamy cesar Greek yogurt and meatless bacon bits with mashed salmon all mixed together. It was really good and filling. 74 carbs. for the entire meal.

Believe it or not, I have a salad for dinner on EVERY weekday and have done for some 25 years! I allow myself 2 'sin-days' at the weekends when I indulge in some oven chips on Saturdays and steamed potatoes on Sundays.

I never ever get bored of my salad - I just change the main ingredient each day!

Your recipe above is definitely one I intend to try although I don't eat meat so it'll have to a substitute of some kind! ;-)

Sweet! I'm a 'pescatarian', i.e., a vegetarian who eats fish and I have salmon & tuna every now and then, usually as 'steaks', with my salads - otherwise it's a Quorn meat substitute.

I've read a few posts where some people have noted that they don't enjoy the texture/taste of Quorn but as I haven't ate meat now in 35+ years, I don't really have anything to compare it with - in any case, ... I really enjoy it!

I use mashed tuna and/or salmon so everything is mixed together when it’s in the salad.πŸ˜€πŸ‘πŸŒˆ

It was really tasty, Zest . :-) I will see if we can have another one hopefully next week. I hope we have enough salad to have a big salad. If not, then I will have a side salad with something as the main dish. :-)

Not for me,I am losing weight, for my wife, Dr did tell my wife to watch her carbs. I have been encouraging her and been very supportive. Unfortunately, she hits snacks after eating. I gingerly try and say” do you need that” Got her into yogurt.Difficult for her. That beautiful person sitting next to me

Does she want to try Greek yogurt? I eat it for breakfast, ( sometimes) at lunch and before bedtime with a protein snack bar.

She has been staring, I have been eating yogurt since β€˜70’s. Managed to get her into it, yet she did sneak an ice cream-I have to ease her into this transformation. I don’t want her on meds if she/I/anyone can help

Thank you for saying that. I have been diabetic for 39 years.

Staying well that long as a diabetic takes a lot of work, watching blood sugar, other tests, I am sure you know, hemoglobin A1C, etc. That is a testament itself in how well you controlled it. And for that, also rarely give a gold star ⭐️

Thank you! I also use a CGM (Continuous Glucose Monitor) system to see blood sugars every 5 minutes.

I am glad you have current technology to assist you. I had a friend around age 7-8( girl just a friend) My parents took us to an amusement park. Cotton Candy etc. She became ill with juvenile diabetes. She tried to enjoy life to fullest, she asked and I was honored to take her to her senior prom. She had a child, again a sad moment when she passed away at a young age. I am glad for the advancement in diabetes. A few decades with that advancement, I wish she was here. A real friend

And that’s what we want-friends, family, medical help. But you managed it for so long. It’s not my place, type 1& 2 are different as you know. Almost 40 years to me is simply again all I can say is amazing. YOU -followed the science, the Drs & and yourself.
