Hi everyone. The picture is the Big Salad I had for dinner tonight. It was really good and filling with: tuna, salad with dressing, fake bacon bits, black and green olives, shredded cheddar cheese and walnuts. For dessert, we had a gluten free cookie that my Niece had done with us today after lunch ( see the cookies posting).

That’s fantastic to hear about your dinner. I haven’t had any turkey in a while for dinner. That gives me an idea to do that soon and order it for pick up over a weekend.πŸ˜€πŸ‘

I love pineapple for some desserts with certain meals. It goes well with Enchiladas and burritos. It also goes well for some salads.πŸ˜€πŸ‘

I enjoy tuna, egg, chicken, etc., too on my salads. It depends on what we have in the house at the time when preparing them.πŸ˜€πŸ‘πŸ₯—

So followed by a home made choc chip cookie it all sounds perfect to me. 😊

Another winner Leah! At first glance I thought this was chicken with bacon, and I'd never thought of pairing it with tuna, but that does look delicious. That's a salad with some great ingredients.Last night we had a chicken biriyani. I cheat pretty badly and use a biriyani spice paste ready mixed which makes for a more reliable outcome than going it alone. In fact the whole thing was a bit of a cheat. To my basmati rice and cubed seasoned chicken breast, I added cubed Jersey Royal potatoes and a chopped yellow pepper and an onion with some defrosted frozen mixed veg. Really quick, simple and tasted good! Hubby went in for seconds! 😊

I love salads in the summer. It's surprising how filling they can be. Yours looks really tasty and colourful.

Wow -looks truly amazing I did a nice potato salad the other night & instead of using mayonaise to pour over them I used plain yoghurt

That sounds good! We sometimes use Mayonnaise or mustard and hummus depending on which type of salad we want to do. Hummus mixed in if it's tuna or egg salad. Mayo. with mustard for potato salad. :-)

I dont like mustard im afraid -i cant use tuna anymore because I cant open tins anymore -even ring pulls cos of my arthritis

It depends on the brand and store near you, possibly. By where I am, some stores have both can and packages for tuna.πŸ˜€πŸ‘

You should be able to get fresh tuna at the supermarkets

That's a good suggestion, Sara_2611 . Fresh tuna is delicious. Buy a tuna steak, and cook it as you would cook a steak. I like mine rare. You can then let it cool, or make a warm salad, where you take it off the pan and let it rest for a couple of minutes, then slice or crumble it on top of the salad, and even pour some of the cooking juices over.

(next time I am in a supermarket, I will see if there are any easy open packages near the tinned tuna)

Oh! Sara, have you considered an electric can opener?

Looks yummy and filling. One of my favourite big salads is tuna, Mayo, cheddar cheese, red cabbage, celery, red onion and apple.

Interesting. I always think of salad as being around 90% veg with a portion of protein. Yours seems to have a different balance

It’s the balance of a low carb.-high protein and gluten free diet since I have to count carbs. for tighter blood sugar control.πŸ˜€πŸ‘πŸ₯—
