I've been baking plenty of cakes during lockdown and I try to keep them as healthy as possible I don't have weight issues and have plenty of exercise.
Here's the recipe: 165g SR Gluten free flour 110g butter 2 eggs 85g brown sugar 125g raisins 1/2 tea spoon nutmeg.Flaked almonds to top.
Mix everything up spread into a greased cake tin add flaked almonds and bake for approx 45 mins 150C until cooked through.
I put the fruit in a pyrex jug cover with boiling water with a little nutmeg and heated it up in my micro wave oven for a couple of mins, this softens the raisins and makes them less likely to sink.
I had a slice earlier and enjoyed it its been sunny here but there are some very dark and imposing looking clouds almost upon me...and on that happy note enjoy the rest of your day folks. π π
I was advised to try a gluten and lactose free diet 6 months ago to reduce the inflammation from PMR. This has made a big difference to me and I have lost weight. Will be making this cake soon, thank you.
