Hi everyone.

I am looking for quick meals that are healthy i usually do sweet potatoe & baked potatoes with fillings when i cant be bothered.

Recently went on to roasting vegetables

But finding that takes too long with washing up after.

I have chonic pain.looking to save energy.

Any. Ideas? Please share 😀

Frozen veg might help you :) it's usually pre-prepared, so you just need to put it on a tray and pop that in the oven or pour it into a pan and stir fry :)

Washing up needn’t be a big problem as you roast in one pan so just leave it to soak.

Yea i already roast veggies i par boil meaning boil my veggies partly first in a pan takes less time to roast.

I was actually thinking about a slow cooker.Put everything in and sit back.Think that would mean im on srews constantly lol.

I do use frozen veg to cook from find they too soggy , to be roasted.I have never tried freezing the roasted veg mimd may try a small batch and see.

Hey slow cookers are great you can cook curry soup and it’s minimum fuss. We have some slow cooker recipes under Topics. 😊

Could you roast a load of veggies and freeze in smaller batches then just heat through when you need them? My go to is jacket potatoes too. Other quick meals I like are egg muffins. Raw eggs, splash of milk and add anything you like, chopped tomatoes, chopped spinach, small amounts of grated cheese, bacon or ham add to muffin tray and bake for about 10 minutes in medium oven heat. They're good for breakfast cold. Or keep a bowl of pasta and pesto in the fridge and have that with a side something like peas, chicken (quorn) or salad.
