Important note for people with Histamine intolernce.

Be cautious with pastes! The puff pastry can cause problems in your gut.

We noticed the issues since many years at different Producers. A possible reason are the drawing greases which are added in the dough.

Hi vinifera

I don't consume puff pastry very often - but I did make some once in a catering class, but I'm wondering what the term 'drawing greases' actually means, as I know it's a term - but presumed it was just the constant folding action of the pastry rather than adding anything extra? I don't know how they make the manufactured version of puff pastry though.

Interesting that you've experienced problems with your gut as a result of puff pastry.

I was wondering this too. I don't know how much commercial pastries vary from homemade (I know the theory for homemade, but have never made it).

I wonder if it's an issue for gluten free, as that's all we eat now anyway.
