Well I don't know about anyone else but I cooked too many sprouts and carrots so today I blended them with some coconut milk added coriander, cumin, turmeric and coriander leaves. And I grilled thin slices of chestnut mushrooms and put them on top, it was very nice too ๐
I hope that everyone enjoyed the festive period and hasn't indulged too much, one of my friends claims a balanced diet is a cookie in each hand...๐
What a great idea to blend the left-over veggies with some coconut milk and those lovely spices and herbs - it sounds sooooo tasty! I've just been buying up some 'reduced price' veggies - so I have tons of them now - and I'll be hoping to make some soups and various other things, to make the most of them.
I have over-indulged this Christmas, but I hope to get back on track again as of tomorrow!

Thank you, no Iโm a coeliac so need a gluten free diet and I look at all the foods that I can eat that are naturally GF and from various cultures. And I really like it when something I make is not only GF but suitable for our vegan friends/members. ๐
