Afternoon in the kitchen

Today I did some food prep for my busy work week ahead. I tried a new recipe - Tomato and Basil Soup:

I made up a few containers of overnight oats which I keep in the pantry, then the night before I want them I add almond and coconut milk and pop it in the fridge. The dry mix contains oats, coconut, nuts, seeds, cranberries and sultanas.

I made a big salad and my daughter made a batch of rissoles so we had some for dinner and froze the rest.

Being organised is my key to eating healthy πŸ˜‰

Hi Kaz, well you have been busy, I love tomato soup and yours looks and sounds really good. Its great that your daughter made the rissoles while you made the salad so well done both of you.

My organisational skills are more chaotic than yours...πŸ˜€
