As it's been National Baking week and talking about bread making I usually make 1 large loaf and then some rolls or a small loaf and sometimes I bake it in a small round cake tin and cut it in half so its perfect for lunch. I added ground garlic chilli and dill.
I need to use a cake tin for bread making as I make a thick batter rather than a dough. I add seeds for extra texture taste and nutrition, I used sesame pumpkin and golden linseeds and with the ground chilli it has a bite.
This shows the texture and that it's risen nicely.

Wow! This looks really great, Hidden ! It reminds me of the two loaves my brother did recently ( banana and pumpkin). Both breads that he did were rectangular in shape, but not gluten free.
I made banana bread a few years ago, my nephew was staying while in Uni. I made the mistake of leaving it out to cool. When we came home I asked where the bbread was, he said hethought he would taste it. He got carried away, at least he enjoyed it.
Amazing, Jerry you have me motivated to convert that to Keto. Would be simple just a few changes Almond flour, truvia or sugar sub.would use a brown, seeds for sure would stay and butter or oil used would work. Can you print out the recipe or can we find it recipes? Icould jump in and have a piece with dinner tonight, Althought might not match my dinner plans.

Here's the basic recipe, I added ground garlic chilli and dill.:
450g GF bread flour a 1 table spoon of olive oil 1 tea spoon salt 1/2 teaspoon of baking powder 1/2 tea spoon vitamin C powder, 3 free range eggs 400ml of Luke warm water with a tea spoon of brown sugar and 2 teaspoons of yeast powder. I add sesame seeds and pumpkin seeds to the mix and I sprinkled more golden flax seeds with sesame and pumpkin seeds on top. Leave it to prove for approx 30 mins and bake 170C for 25 to 30 mins.
Thank you Jerry just as I though only thing I trally need to change is the Flour to Almond Flour and use stevia brown sugar the rest can remain the same. Will try this week my husband will be so excited to come home to keto bread. Might ruin his diet as he will eat so many slices.
We both will love it and we like it spicy so the more chili spice I'll try but not over do to start to ruin the bread recipe. We both enjoy the fiber of the seeds and the Vit. C powder is nice.
It bakes up pretty nicely a little more dense flavor is more nuty on it's own. We love to eat nuts and the crunc of the crunch of the nuts and as you point out added nutrients are excellent for everyone.
First have to convert to US not metric. We go by cups and tsps and tlbs. Then I want it fresh for him so baking day will be Thursday if I have enough Almond flout. He made me a Sweetest day treat do not know how much he used. We have not been baking since it was summer,not useing the oven. Only the outdoor grill.
I bet this smelt gorgeous when you baked it, a very nutritious bread, I'd like a slice toasted, covered in raw sliced tomatoes, a little cheese and olive oil then put under the grill, yum.
