What do you cook/eat when you are exhausted?

Hi everyone,

My mom has Hashimoto disease, Ebstein Barr Virus, and Cushing disease, so needless to say, she struggles with energy. When she is hungry, she grabs what she can find, which is not always enough nutrition for her. For her birthday, I want to put together something for her with recipes that require very little effort or energy to make, but something she could do when she's hungry and low on energy.

So here's my question to you all... what do you cook/make when you're tired and feeling low? What kind of snacks or meals are your go-to? Do you have recipes that don't require you to stand for long?

If you could share the recipe on here or a link to it, that would be wonderful.

Hi gratefulbean what a lovely idea for your mum. I sometimes work long hours and find anything egg based like omelettes with salad and cheese quick and easy. If she needs easy but not necessarily quick a baked sweet potato cooks in about an hour in the oven, I do large ones so I can halve them and then heat up the other half the next day. Frozen veggies are often as nutritious as fresh and only take a few minutes to heat up. I’m sure people will give you lots of ideas 😀

Thank you! I know she likes sweet potatoes so that's an excellent idea! Also, using frozen veggies is a great idea too. :)

I agree with Fran192716 eggs are very quick and easy. I boiled many of them in the morning. You can eat them as snacks or with a salad. You can experiment with omelettes too and add herbs (I love parsley) you can add mushroom and/or peppers and/or onions and even vegetables. Salad can be very luxurious and healthy with olive, avocado, and even preserved aubergines, tomatoes etc.

Frozen or Fresh it does not take that long to stir fry vegetables such as spinach and broccolis or long beans. I used to season mine with soya sauce freshly grated ginger and garlic. You can sprinkle seeds (pumpkin etc) over them too.

You can also batch cook if you don’t mind. Soup is great to batch cook and freeze and quick to heat up and eat.

If you eat yogurt Greek yogurt with frozen berries are great as desert, snack or at breakfast.

Eggs the best to cook dsnt matter if scrambled, boiled or poached there good for you and easy to do

That's right! My mom does like eggs, although she can only eat them cooked a particular way but at least it's something I can add to the list. :)

I love my slow cooker! Just throw everything in and it does the rest. If using minced beef it’s best to brown it first though. Loads of free recipes on line to suit all tastes. Plus you can make a lot all in one go and freeze portions for another day. x

What a lovely idea. My favourite meal to cook when I really can't be bothered is

Grill sausages. While they're cooking, add 1 tin of beans, 1 tin of kidney beans in chilli sauce, 1 tin of chopped tomatoes,1 chopped onion if you want to (you can get frozen chopped onion now) to a casserole dish/slow cooker. Add paprika and cumin.

Once the sausages are cooked, slice them or leave them whole, chuck them in with the beany mixture and put it on to cook low and slow.

It's so comforting and tasty. We often have this when I'm feeling crappy, and my hubby says it's one of his favourite dishes.

My quickest ever “real” meal is using a microwave steamer. A portion of any sort of fish (smoked haddock, salmon, trout) and cooking with it at the same time tenderstem broccoli only takes four minutes. I don’t eat potato at the moment but I used to like any sort of pre prepared mash (chilled from supermarket, frozen or even instant with some added butter). For white fish I buy a small sachet of Lloyd Grossman cheese sauce (50p in my supermarket) which microwaves in 45 seconds.

My favourite comfort food is scrambled eggs and baked beans, it’s healthy too!

I like egg fried rice, can use prepacked rice, or cooked rice that’s cooled and kept in the fridge, receipes on line with variations but l use, peas, eggs, ginger, soy sauce, olive oil, rice, spring onions and just add in any leftovers l fancy, very quick and easy

I make soups easy to just get mixed veg. fresh or frozen, boil with gravy or sup mix add onions if liked. Either boil and eat like that or put in soup maker. My husband buys mashed potato frozen, he add cheese on top. You can add chicken or ham or low cal. sausages. Ommellettes do not take long to make, anything can go in them cheese, ham, peppers, onions.

Foods that pack the most nutrients and are easy to digest: Eggs with chunks poached salmon- very easy to make in the microwave- avocados with cheese, Tofu, toasted nuts and seeds a handful of raw spinach thrown here and there, honey, mashed dates mixed with nuts to make little truffle like treats...Marmite. Meat or fish loaf, which packs vegetables, either meat or fish and eggs and can be made in advance and kept in the fridge. Soups made with chicken and vegetables, perhaps a boiled egg thrown in and blended into a thick cream. I usually blend a banana, chocolate,coffee, whatever I have at hand, with some yogurt or milk and protein powder to make a quick drink and I take a vitamin B complex rich in vit B12.

I love my slow cooker if I'm feeling sluggish. Frozen veg is very helpful too, because it's ready prepared, often cheaper then fresh, and if you don't use it, it won't go off. Throw it all in the slow cooker, add some meat or legumes, pour over some tinned tomatoes or coconut milk & curry powder and you have a meal.

I have Hashimotos and found Izabella Wentz Hashimotos protocol completely turned me around. I feel so much better for having done it, so I would recommend looking at some of her stuff for your mum :)
