****Please remember to soak them all overnite and wash again the next day. For that matter all lentils including rice for a few hours.

As i was also in a dilemma trying to find our good websites for recipes. I purchase my stuff to test and try from whole foods bulk barn or where they sell in loose unpackaged form in small quantities then if not good i throw away the recipe.

I love lentils. This is an easy way to cook them. Rinse one cup lentils and add to 4 cups water. Simmer for 20 minutes and drain. While they are simmering sauté in a couple of tablespoons of olive oil. finely chopped onions(about 1/2 of a large onion) 3-4 stalks chopped celery, throw in some chopped carrots. Add 2 tablespoons of dried thyme (or more to taste)and a cup of water and simmer for 30-45 minutes or so. I add about 1/4 cup of dry vermouth in the last 15 minutes or so. Delicious!
Mujadara is a traditional Mediterranean dish made with green lentils.
The one I had was pretty much just lentils, onions, rice, butter, salt and pepper.
I can't find a similar recipe but it might be worth googling Mujadara if you're looking for Mediterranean.
