What do you mean by unprocessed? Uncooked? Some legumes are poisonous raw.
Maybe you could start by explaining what 'whole food' means. Just a tip (not criticism).
Then compare the whole food diet to other ones.

In my book dried legumes should be soaked & rinsed. I cooked some split chickpeas last night and I rinsed them even after cooking since there was a lot of froth.
The only legumes that I have ever considered poisonous are kidney beans and I cook these fast for 10 minutes at the beginning.
All this lectin nonsense is complete rubbish. No-one eats raw legumes: cook them and the lectins are gone. POOF! There is no scientific research AT ALL showing societies being damaged by lectin consumption, whereas there is a lot of scientific research showing legume consumption is associated with better long term health outcomes.
