Today I cooked Coconut and Ginger Braised Chicken and it is packed full of flavour. Here’s the recipe which I tweaked a little:
- I cut up the chicken rather than cooking it with the bones in
- I didn’t put the noodles in (just served it with rice)
- I used coconut milk instead of coconut cream (that’s all that was in my pantry)
- I added 2 tablespoons of chia seeds which are packed full of goodness and helped thicken it a bit.
It reminds me of a Laksa and it could be tweaked again to make it an Asian style soup.
