Home baked Gluten free fruit bread ☕️

Hi everyone,

Here's some fruit bread that I made using 1/2 GF brown bread flour and 1/2 buckwheat flour with Californian raisins, what I do when I use dried fruit is soak them in boiling water with some spices first so when I add them to a bread/cake/cookie mix they are lovely and soft with extra flavour and don't sink so easily. I used my usual bread recipe I just added fruit and spice.

And this was perfect with a nice cuppa this afternoon. 😊

Thank you Debs, this is why I bake my own, I expect there will be gluten free vegan hot cross buns in the shops soon. I love hot cross buns...😀

Wow, your Tea Bread looks so scrumptious. How long do you usually soak the dried fruit for, and how much hot water do you add to soak it? I think I will try your method to soak the fruit for next time I make my cake. What spices do you generally add?

I also see you that you mentioned using your 'usual bread recipe' - can I know which one that is, as I'd like to try to replicate your Tea Bread sometime - it looks SO good.

Thank you Zest, I just cover the dried fruit with boiling water and add cinnamon mixed spice and ginger. Around 20 mins is fine you can boil them to speed it up. I came across the method of soaking dried fruit over night to make a Yorkshire tea cake which's another favourite of mine.

Thanks very much. I am wondering if it would matter if I didn't put the yeast in it - i.e. use the bread recipe you have and add the fruits, but not have the yeast - I ask that as I don't have any yeast in the house and I'm thinking that I don't usually use it in my cakes - and they seem to come out ok...

I like the soaking of the fruits idea - I bet it will be incredibly flavourful that way. I am definitely going to do it. :-)

Hi Zest, I also use a recipe like this:

But I only use 80g of sugar and because you add it to the fruit it makes the loaf taste sweeter. I also use ordinary tea and add spices but this saved me writing mine out...what I also like is this is fat free...😊
