Here’s another little creation determined by what I had in the fridge and pantry. It’s basically a bolognaise sauce (tomato, onion, garlic, etc) to which I’ve added grated zucchini and carrot as well as spinach and kale. I served the sauce with pasta one night then mashed some potatoes to put on top and cook as a cottage pie. I froze individual serves so it’s a quick and easy meal when needed - I heated it in my oven so the potato is crunchy. Today I served it with some tinned beetroot. That’s nine different plant based foods in one meal and a few different colours on the food rainbow. It’s delicious and healthy so I’ll definitely make it again soon.

Your meal looks fantastic. 9 different plant based foods in that one meal - plus some colours from the Rainbow - looks totally scrumptious to me. :-)
