Hi peaceofmin
Welcome to the Healthy eating forum, and it's nice that your friend enjoyed her lunch - thanks for sharing the photo - it looks very tasty, and has some nice ingredients in it.
I hope you'll enjoy participating in the forum.

The red stuff looks like nice, but I wouldn't want that vast serving of starch (cassava?) on the side.
Cold-pressed palm oil is good stuff. It's acquired a bad rap because of the way oil palm is grown commercially, but in real terms it's probably less destructive than temperate-climate oil crops because it's a perennial plant that's planted in a polyculture (typically with flemingia, desmodium, pueraria, or mucuna spp. as a ground cover). Doesn't mean we ought to be cutting down rainforests to plant more of it, but it's a nutritious oil that can (theoretically) be ecologically sustainable.
