Another one of Zest’s delicious soups

For lunch today I cooked up a pot of broccoli and sweet potato soup from the recipe that Zest recently shared. I didn’t have any coconut cream so I put some coconut flakes in the mortar and pestle and pounded it. I also used freshly ground black pepper instead of white pepper The soup was delicious (of course) and I now have a few more meals in the freezer. Thanks again Zest!

Hi Kaz747

Your soup looks lovely! I'm so glad you enjoyed it, and that the recipe worked out ok - and I like your tweaks - it's good to know it works well with black pepper as well as with white. Good idea with the coconut flakes and your pestle and mortar - it achieves the same thing. Very inventive!

I was going to freeze some of mine, but I'm enjoying it so much that I'll be having the third portion this evening - as I'm out for my main meal today, so going to enjoy a lighter soup meal in the evening.

Hope you have a lovely day.

Zest :-)
