Easy Eggs

I’m not working at the moment because of some health issues so I’m enjoying having more time to cook interesting, healthy meals. Often at lunchtime I throw into the pan a little butter and sauté some red onion then add a mushroom or 2, a few cherry tomatoes and a small handful of spinach, then add a whisked egg with a dash of milk and ground black pepper and stir it through. Quick, easy, healthy and delicious. Calorie count with 1 egg is around 100. Today I added a slice of mixed seed sourdough toast with butter which added another 100 calories. My husband was home for lunch today so there is more in the pan than usual.
