Maybe you could flavour your pancake by adding some banana? That has quite a sweet taste, and other additions could be some sultanas or other fruits that you might like - strawberries, blueberries?
I bake cakes without any 'added sugar or sweetener' - as I prefer to add banana, and some dried fruits.
I've also noticed that taste buds do change, and maybe you'll 'get used' to having less sweeteners in things - as you adapt.
Good luck, and I hope that you continue to enjoy your pancakes.
I gave up sugar virtually overnight due to t2diabetes I don't like the taste of sweetners, they leave an aftertaste, it tooke 2 week to get used to it, and after 2 to 3 weeks, I found so many things were really too sweet formy taste buds. If I do have a single sweet, yes it is possible, I think really hard "is it worth it" mostly the answer is no.
Thanks a lot for your answers. I searched a little bit on Internet and found that Coconut Nectar can truly be a suitable alternative. Did you ever hear about it ? I found this one, balinutra.com/
Do you have Cary's sugar free maple syrup where you are? My brother Jim became diabetic at age 5 (type 1), and I always got it for us. With some oatmeal or cornmeal in place of some of the white flour, it was good enough for me too.
