I roasted one whole chicken rubbed with origano, olive oil, salt and black pepper. We also have garlic & shrimp paste fried rice and salad. It's really a simple meal but is enjoyable 😆

Hi Frostie2560: You may not familiar with using shrimp paste in your cooking. They are known among Southeast Asians. They are also one of the ingredients of Thai curry paste like Green or Red Thai curry paste.
This fried rice is pretty simple using 4 ingredients: 4 cups cooked rice, 1 TSP chopped garlic, 2/3 TSP shrimp paste and 2-3 TBS cooking oil. (I sometimes add some green peas or sliced button mushrooms).
How to cook: warm up the oil in a pan or wok, add garlic and stir for a minute till golden then put in the rice. Quickly mix all the rice into the fried garlic & shrimp paste mixture. If use green peas or sliced mushrooms, should add them in before the cooked rice.
Warnings: I usually turn on the ventilation fan and open all kitchen's windows due to the strong smell of fermented shrimp paste. Also minimise the amount of shrimp paste if you dislike salty favor.

Maybe once but a long time ago before I really loved to cook but I love to try new things. There was a fantastic Thai restaurant in London I used to go to but I’ve never found anything as good since and I did try some Thai pastes to cook with but found them lacking.... in what I’ve no idea!
If my son wasn’t home unwell I’d be straight to the shops to get some shrimp paste.... we have plenty of Asian food shops in Newcastle. Thank you so much. I can’t wait to try this.😊
Have a look at this link for a sample of original Thai shrimp paste rice which has a lot more ingredients and it's delicious. You may try them at Thai restaurant. This dish called in Thai "Khao Kluk krapi"
Khao = rice
Kluk = to mix, to stir
Krapi= shrimp paste

My garlic & shrimp paste rice is modified whenever I want to use up my leftover rice. It also goes well with either roasted chicken/beef/lamb.
