Tonight’s dinner ...
It’s a bit like a quiche (without pastry). You can chuck in whatever you have in the house and the measures below don’t have to be super accurate.
Tonight I used:
5 eggs
1 cup sifted self raising flour
1/4 cup vegetable oil
1 cup grated cheese
250g zucchini (grated)
100g carrot (grated)
50g asparagus
60g mushrooms
100g red capsicum
50g corn kernels (frozen)
1 medium onion diced
200g bacon diced
Sauté bacon and onion first
Whisk eggs
Add flour, cheese, vegetable oil, all the veggies and the bacon and onion. Mix together and place in a oblong dish. Cook on 200 degrees Celsius for about 35-45 minutes.
Serve hot or cold

How long have you been living in Thailand? I love Thailand and Thai food. In fact last time we were there we did a cooking course with Smiley Cook Samui. You must be a smiley cook too with a name like happycook1 😀
