Hi new to this site and trying to improve my diet, I currently have Alpen for breakfast, white bread salmon sandwich for lunch and then trying veggie mainly for dinner. Having read posts on her I recognise that maybe the alpen and white bread aren’t a good idea and wondered what I should swap them for ?

I haven't looked at Alpen specifically, but I would have thought it wasn't a bad cereal choice - there may be a reduced sugar version available? But I thought the ingredients in Alpen were things like oats and dried fruits, so sound like a nice breakfast choice.
Regarding bread - I agree that avoiding white bread is a good idea. There are some lovely breads out there made with wholegrains - and we had a post about homemade breads - I will have a look and put a link here for you to look at, if you're interested.

Just a thought:
Breakfast: cut up some fruit or berries, put a little yogurt on that and some alpen on top for crunch.
Lunch: make a big salad with lots of veg, options to add, hard boiled egg, olives, cooked quinoa, cooked beans. Sometimes I make this on the go in a quart jar and layer it.
Dinner: have your salmon with vegetables.

I quite like Dorset Cereal muesli as I can see the ingredients, & there's no added sugar or powdered fillers. The berry or nut ones are nice, though it's easy to buy oats, nuts seeds, & fruit, to make it.
I don't often eat bread, & if I do, I opt for some sort of wholemeal sourdough that enhances rather then decreases iron absorption.
Swop the Alpin for porridge which can be made with milk or water and topped with fresh fruit and seeds. Personally I slice 1/2 banana whilst it is cooking. I use oatmeal though as I prefer the texture. I soak overnight so that it doesn't take to long to cook. Watch out for ready cook porridge. Most contain added sugar.
For the bread try to alternate wholemeal and white or find a mixed grain bread.
I bake my own to get a 50%wholemeal 50% white with added seeds or cooked grains.

Yes it is good. I also stew apples with cinnamon , star anise and cloves, sometimes raisins and add a dollop of that rather than banana.
