Continuing my theme for toady is a meal that is not only healthy but suitable for special diets. I'm a coeliac and I see my diet as a whole food one and I don't have a lot of dairy and really like coconut milk, so lots of my meals are paleo/vegan.
Quinoa is a complete food as all the food we eat is broken down into 23 base amino acids and our bodies convert the food we eat into 15 and the remaining 8 have to come from the food we eat, quinoa contains all 23 so is a complete food and is a great replacement for rice or potatoes. This also has Bok Choy (Chinese white cabbage) which's very low in calories yet remarkably high in vitamin A. in fact one portion contains 20 calories and over 60% of our RDA in vitamin A. Chard is loaded with nutrients. It is very important when dieting or on a special diet to get enough nutrients as some people have such poor diets they are over fed and undernourished, so keep well nourished especially if you're dieting.
I cooked the quinoa in water, at the same time I gently cooked sliced onion, garlic, chillies, rainbow chard, chestnut mushrooms, Bok Choy, tomatoes on a low heat so they cook in their own juices by keeping a lid on the pan then I add the cooked some chia seeds the quinoa, a little coconut milk and water + seasoning: ginger, turmeric, coriander, cumin, black pepper and a little Himalayan sea salt.
