Ok, well I'm a healthy 63 year old female and I've been diagnosed with Hashimotos disease. Thankfully, not the worse thing in the world. Now, to work with it. I've addressed the hormone issues and am working on a proper diet. Main obstacles: NO Gluten, NO SOY! Of course they are both in everything. I want to lose 30 lbs have started walking for that. My eating plan must be 1200 calorie minimum.
Any suggestions?

As someone who has had to eat gluten free for several years, my main recommendation would be to keep ready-made gluten free food to a minimum. It's often full of sugar and various additives which are best avoided.
There have been several very tasty gluten free recipes posted on this site, worth having a look for in the healthy recipe section.
Good luck with the diet. Perhaps have a look at Michael Mosley's latest book, or website, "The Clever Guts Diet", lots of good recipes to help improve your gut health.

Very few foods contain gluten & soy, so they're easy to avoid. If you make everything from scratch you can tell exactly what you're eating. Fermented soy is fine, I still eat this regularly. Zest has lots of links re healthy eating & weight loss. Hidden has posted some amazing GF recipes. I like the Food Monster website which has a lot of recipes that are labelled as GF or soy free if you're unsure about what's ok to eat.
If you're taking only levothyroxine, you might want to try a good probiotic like kefir so you can better convert it to T3. Good gut health is important to everyone, even more so for anyone with hormonal issues.
I dont have Hashimoto's though found I lost weight whilst increasing my calorie intake, once I started taking thyroid hormones. I'd eaten a lot of soy for 10 years, which made me more hypo than I'd been previously.
