Homemade Ice Cream
Wow, Alicia, that looks soooooo delicious!!! Thank you so much for sharing that photo - I must try to make some homemade ice-cream, so I hope you will maybe share your method/recipe - it looks really good, and like you say, much better when you know what ingredients are in it.
Zest
Hi Zest, it was so easy to make and apologies as I did say to you that I would share the recipe which is:
4 eggs, separated
100g icing sugar, sifted
1 teaspoon of vanilla essence (I used extract as of course that is natural)
300ml of double cream, whipped
Whisk the egg whites until stiff in a bowl, add the icing sugar, a tablespoon at a time whisking well after each addition. Whisk in the egg yolks one at a time with the vanilla extract. Carefully fold in the cream.
Pour the mixture into a large container or 8 small dishes. Cover and freeze until firm. If frozen in a large container, transfer to the refrigerator about 15 minutes before serving.
I have an ice cream maker so when I had made the mixture I put it in the bowl and left it working for 50 minutes. The good thing about that is if you haven't quite mixed the cream in and still have lumps the ice cream maker smooths them out.

I definitely hope to make it, and I'd also be interested to know what you would add to make it a 'chocolate flavoured ice-cream' - so if you could let me know that - it would be great - I've not decided which flavour to make yet.
It is lovely and I will have a look at my ice cream book and let you know what to put in the chocolate one.

Absolutely, I worked at Bristol Uni and on open days we made ice cream similar ingredients as yours but we used liquid nitrogen at -196C and that froze it instantly so no air bubbles or ice and super smooth. And it looked spectacular as the liquid nitrogen expanded 200x so the person pouring it was obscured by cloud then et voila instant ice cream, it was the most popular demo too...for some reason🍦
I can imagine that the ice cream making demo was the most popular and using liquid nitrogen is amazing - I have seen this practised on Masterchef and I love watching the programme.

Hi all! Make some 'Nice cream'. I am vegan but even if I weren't I would still be loving on my nice cream. Frozen bananas whipped up in the food processor make for a creamy, delicious healthy treat. You can add other types of frozen fruits and nuts to it as well. It is not a banananey (is that the word? lol) taste at all. It is addictive though. Frozen bananas are definitely my staple food.
