Zest's banana ice cream goes plant based...🍌🍨

Hi everyone,

I had to have a go at making this ice cream as ice cream without sugar sounds like a win win to me.

I used 3 bananas stoned apricots and a large 270ml carton of plant based cream I added a few drops of vanilla bean extract whizzed it up in my food processor and spread it into a container and froze.

I had it with some freshly picked blackberries picked at the back of me so not far to toddle off to get some fresh and free fruit.

Now the only thing I'm not sure about is Zest says it should last for 3 months in the freezer! I'll give it 3 days LOL.

Wow! That looks really good with the blackberries. It's perfect weather and temps. for it, too! :-) How long did it take to prepare?

Hey thanks Leah, it didn't take long to prepare as its only a few ingredients and the food processor makes it easy peasy. I'm very pleased with it especially for a first attempt. 😊

That's really good to hear! I may have to take a little longer trying it since we don't have an ice maker for the freezer. We don't have ice cubes premade, so I may have to find an ice cube tray and put the tray into the freezer for a few hours before I can start the rest of the prep. work. :-)

I just put it in the freezer in a plastic container and it froze in a few hours. 😊

I have quite a few old bananas in my freezer for ice cream making (I just blend bananas with berries). This week I'm hoping to try blending frozen mango and tinned coconut milk to make ice lollies, but it's a tad cold just now.

I've some whipping coconut cream to try as I was pleased to see that in my local whole food shop.

It's been muggy down South but we have colder air coming today.

That does sound really good Jerry, can I ask where you got your Vanilla Extract please? I can't find any anywhere. It wouldn't last 3 months with me either : >

Hi Debs, thank you its ever so quick and simple too, here's the vanilla bean extract that I bought from Tesco's:

Looks good...I sometimes put a whole banana in freezer then when solid blitz it and it tastes and textures like icecream but it's no added ingredients
