I had to have a go at making this ice cream as ice cream without sugar sounds like a win win to me.
I used 3 bananas stoned apricots and a large 270ml carton of plant based cream I added a few drops of vanilla bean extract whizzed it up in my food processor and spread it into a container and froze.
I had it with some freshly picked blackberries picked at the back of me so not far to toddle off to get some fresh and free fruit.
Now the only thing I'm not sure about is Zest says it should last for 3 months in the freezer! I'll give it 3 days LOL.
Hey thanks Leah, it didn't take long to prepare as its only a few ingredients and the food processor makes it easy peasy. I'm very pleased with it especially for a first attempt. π
That's really good to hear! I may have to take a little longer trying it since we don't have an ice maker for the freezer. We don't have ice cubes premade, so I may have to find an ice cube tray and put the tray into the freezer for a few hours before I can start the rest of the prep. work.
I have quite a few old bananas in my freezer for ice cream making (I just blend bananas with berries). This week I'm hoping to try blending frozen mango and tinned coconut milk to make ice lollies, but it's a tad cold just now.
That does sound really good Jerry, can I ask where you got your Vanilla Extract please? I can't find any anywhere. It wouldn't last 3 months with me either : >
