Here are some of my favourite simple meals (measurements to taste):
Roast chicken + roasted root vegetables
(parsnip, potato, carrot etc. roasted in olive oil)
Roasted eggplant, pepper, red onion, tomato + brown rice + fresh parsley + olive oil
Sausages + mashed sweet potato
Grilled salmon or white fish + steamed green beans + a squeeze of lemon juice
Baked potato (or sweet potato) + chopped vegies + lettuce + avocado + tuna
Cooked and cooled quinoa + grated carrot + sultanas + lemon juice + cumin
