I had the blood test for coeliac disease and the endoscopy and both were negative but the specialist nurse said I could try it anyway to see what happens. My main problem is dry eyes and I've heard some people have had success with this diet. How long would it take to start seeing some kind of effect?

By all means try a gluten free diet to see if it helps you.
I wish I could give you a simple answer as to how quickly it would work for you. I think it's likely to be very much an individual thing.
My understanding is that taking gluten out of your diet for around a month or so and then reintroducing it, is often quite a good indication of whether you have a gluten sensitivity.
If you do decide to go gluten-free on a long term basis, please understand that you will need to monitor nutrients (such as your calcium intake) much more carefully. I would suggest that you seek some proper medical advice about going GF - because gluten-free foods are not normally fortified in the same way that gluten flours and foods are.
