Hi Orbachruth,
I eat a lot of hummus which is made from garbanzo beans. I buy the Joseph's Brand as it has the least amount of sodium and read flavor labels. It's great on toast, bagels with onion and red peppers. Great to dip cucumbers in it for a snack.
I also buy red kidney, garbanzo, pinto and black beans -low sodium and wash them in hot water before adding them to rice, salad or anything else that I cook.
My potassium labs are fine to eat it.
I also eat 1/2 cup Greek Yogurt with chia seeds in the morning as per my nephrologist.
It has my albumin to normal rang; both my husband and
I don't miss the meat a bit!
Take a look at the labs and check with your nephrologist and or dietician if this okay to eat.
Hope this helps!

You will ruin your health by eliminating protein. Your eGFR improved only because your diet is not providing the raw materials for creatinine, not because your kidneys are working better. Protein is absolutely necessary for life. Stage 3 eGFR does not require treatment other than a healthy diet, an abundance of water, and controlling blood pressure and diabetes.
I disagree! That’s what they used to say in the 50’s and 60’s. Now we know through extensive research that the earlier we look after our kidneys and eat plant based protein the longer they will look after us ! Please read Lee Hull’s very well researched and cited text book “ Stopping Kidney Disease” to help keep yourself informed and please don’t tell others not to bother at stage 3. This is potentially damaging and dangerous .
