Bet117, thank you for nice comments. I guess I need to update my profile so you get the entire picture (not sure how to) I've suffered with anxiety most of my life and yet my faith sustains me. Simple life. Simple cook. In fact, I have no recipes, I never measure anything and cook with whatever is handy. Example, cabbage which is inexpensive as you know. Before my kidney diagnosis, I'd add sausage, potatoes and add buttered corn bread. Now, no meat, no potatoes. Scared to overdo potassium. (I do allow myself half a small banana in cereal) A large cup of coffee and toast WAS a favorite, NOW, in the morning I drink 1/2 c with just a pinch of stevia. I've been eating an egg scrabbled in olive oil with onion red/green peppers. Or, hot cereal. Lunch has been mushroom sauteed w/ lots of garlic and herb seasonings. ( I add a little leftover turkey to any dish.) Then, I/2 c coffee in the afternoon. I use unsalted butter on carrots, cauliflower, broccoli, squash,etc. VERY small portion of baked chicken or pork chop once a week. Apples, plums, pears & grapes daily. I was known as the ice cream queen, up til diagnosed, A huge MUG of Blue Bell DAILY, Loved all junk food. Quit "cold turkey". None. Lost 12 lbs in only 2 weeks. Dropping even more.. And my B/P is great on only 5 mg Amlodipine. GP said Benazepril twice daily was hard on kidneys in addition to Amlodipine (taking for years & my pressure was still high! So, it must be because I've lost weight !
Well, Bet, I've bent your ear long enough & my dry eyes hurt ( occular rosacea ) The glare from the computer screen is terrible. I need to put castor oil in my eyes. Have you ever heard that? Takes time to start working but it helps. (GOOGLE it)
Sounds like you have a great GP and nephrologist caring for you; count that among your blessings. My GP left the area suddenly in October; on Friday I am meeting with my new choice and hope that she will be sharp and work with me.
Thank you for sharing your diet. We eat similarly other than the meat. I have basically been plant vegetarian since January, when we realized that my protein spilling was not a fluke or stress related.
( although stress could be a contributor). Hugs to you for the weight loss! It should help everything. Like you, I have made many modifications to my diet. I switched to coffee mate Fat Free original liquid creamer in my iced coffee. I have an soft wheat English muffin maybe once per week and use a low salt canola oil spread.
I generally have an apple for breakfast and 2 tbsp of Lite and Fit Greek yogurt for the IBS. I had a palm sized portion of plain oatmeal with blueberries and strawberries on it as well as a slice of wheat toast when we were away for Thanksgiving. I eat alot of steamed veggies..we enjoy the same choices and rat salad with lots of cukes and onions at dinner as well. If I don't use oil and vinegar, I don't touch a dressing with more than 150mg sodium and modify the portion.
In a restaurant, I choose balsamic and on the side.
Although the RD at the hospital told me an egg or egg white is fine, I just haven't been able to add animal protein back into my diet.
I eat alot of hummus and modiify portions. ( tbsps)
I also soak my own beans or wash any low sodium black beans before adding them to my salad or vegetables.
Lunch is steamed veggies with "I can't believe its not butter" spray, if that.
I keep Wise unsalted potato chips in the house if I need a crunch ( they have no salt at all) and eat 5. Only potato I see. I watch.
Other cheats are a spoonful of of maybe a frozen yogurt.
I would love to share recipes if you think of it. Your cabbage soup sounds delicious! Who needs the sausage and potatoes, add onions!

Hello again Newbie1956, I've just re-read your post which mentions computer screen glare, which I share with you (have been light-sensitive for many years), when its bad, I pop on a pair of sunglasses, which clip on to my spectacles. Also on my computer there is a button at top left which will darken the screen down (I have MacBook Air) - hopefully you will have same sort of thing on your computer? - Curleytop 1.
I've had Occular Rosacea for many years. I have at least 7 prs of sunglasses and often use indoors! Or a cap with wide brim. Yep. And I keep them handy. By the way, I do eat popcorn peppered with curry. Zero salt.
Good news on your positive test results. The diet regimen appears to be working for you. Sometimes diet can be frustrating (especially on Holidays), but it is well worth it.
Hello Newby1956, that soup looks delicious!. Reminds me of my own soups, which I make frequently - using cauliflower or white cabbage, leek (as allergic to onion juice), celery, sliced french beans, and a few frozen vegetables to vary the look, such as red/yellow/green peppers or packet mixed veg. I use a very large cooking pot which makes 6 portions (so have some to freeze for later. For an evening meal, I add a portion of white basmati rice, which I buy ready-cooked in sachets, or a small portion of pre-cooked chicken to the basic soup. For stock I use a v. low salt, gluten-free stock cube at twice the dilution recommended on the packet, this gives a bit of colour and flavour which I enhance by using herbs and black pepper. To be sure to keep the potassium level low, I bring all the vegetables boiling point on the stove, then cool it down to divide into portions -then when I need it, I micro-wave the soup, added chicken portion, and added rice portion together, and after eating it, throw the stock away! This sounds drastic but seems the only way to ensure I'm not consuming too much potassium at one meal. As a variation on the chicken, I boil up 2/3 portions of red lentils in lots of plain unsalted water, cool, rinse and drain them (hope this gets rid of a lot of their potassium content), then add the cooked lentil portion to the soup as I use it.
