Do you sleep well through the night or wake up in between, stay awake for a bit and then sleep again? That can affect the fasting bs.
In your meal plan you have a lot of peanuts. I would like to make a couple suggestions. You might know that peanuts are not really nuts, they are a legume (bean family). The concern with peanuts is mycotoxins they carry due to a mold that peanuts are susceptible to carry. The other concern is peanuts have a tendency to trigger acidity. I would suggest you eat raw peanuts soaked overnight. If possible eat almonds and walnuts at different times instead of peanuts. Do soak almonds and walnuts too before eating, it releases certain enzymes that helps in digesting the nuts.
Good luck and good health.

In addition to Ashwagandha also start ACV
2 teaspoons 2 times a day. Before meals. Night take after meals.
This may control fasting and also beneficial for diabetics as a tonic
