we start fasting tomorrow for Ramadan and I’m so dehydrated that my skin feels itchy and my throat is dry 🤦🏻♀️

I am not a Muslim, but I am certain that your Prophet would not want to cause any undue harm to one of his followers. Can you not speak to an Imam, and ask if there are any dispensations such as, postponing or reducing the amount of Fasting needed at this time. You can then, perhaps, Fast when you are medically, more, fit than you presently are. I'm sorry I can't be more helpful than this, but feel that Imam is the best person to ask. Maybe, if you don't want to ask your own Imam, you could ask another one what the Qur'an says regarding Fasting/illness and Ramadan.
I have just checked, and the ruling, as far as I can understand it is permissible to make up any missed Fast days, due to ill health, at a later date.
If it makes it easier for you to check it up I have found it in Chapter 2, verse 184/5.
Sometimes health comes before religion
I know some Muslims who drink water during Ramadan. Exceptions are made for menstruating girls and pregnant women so sure you will be fine. Make sure you hydrate as much as you can after sundown and throughout the night. Rest as much as you can.
As a muslim myself, this year I do not feel able to partake in the fast - pray, and eat less, out of site of others. I am sure our creator will see that our intentions are not misplaced.
If fasting has the potential to do harm, you and your family will bear the consequences of such - not the wider community so do not feel you need to be judged.
