Started 1.5 miles - 10k - half marathon - full marathon.
I'm now going back to the start and doing the c25k as my timing is really slow but I'm worried this may not help with timing but I am certainly enjoying being back at running!!!

I hope you enjoy your return to running Erin, rerunning the whole course of C25K is fine, as someone who has ran all those distances you should find rerunning C25K easy.
Welcome. Getting pace down means going long and slow and/or short and fast... I too am not sure how C25K will help with that. Have you tried race plans?
