First I have to say that I am really enjoying using Couch to 5K, a really great App
I completed my 2nd run of week 2 last night and am considering running again tonight missing my days rest. Is this advisable or will I regret it afterwards? My legs currently feel fine.

The answer to your question is NO as the non running days are there to enable your muscles to rest and recharge for the next days run otherwise you could end up on the I.C.
Of course, what rest means is no running... you could walk, cycle, hit the gym, do some yoga, just no running. I swear the admins know if we go for a walk and both feet come off the ground together.
I reckon the other half will find me some stuff to do around the house no doubt. Going for a walk sounds good too though, might as well make the most of this nice weather.
Don't run... the legs may feel fine..but... hidden injury is just that..hidden.. Let those sneaky little micro-tears heal
Just follow the plans.. take it steady.. and if you have loads of energy..start getting in the essential core strength and stamina exercises on some of your rest days... It will stand you in good stead for the loooooonger runs
