Paths and grassy areas are described as being easier to walk on than tarmac, etc and it's easy to see why that would be but 'country' areas are often uneven doesn't that have an impact on their advantage?

The harder the surface, the greater the potential impact.
Uneven surfaces work your ankles more and will ultimately make them stronger.
The softer surface will also tend to be slower. You can rarely run as fast on grass as tarmac.
