If you read the guide to the plan healthunlocked.com/couchto5... you will see that it is recommended that you do cross training on your rest days.
The NHS Strength and Flex complements C25K very well nhs.uk/Video/Pages/strength...
Lots of people do yoga alongside running - if you can get to a class that's always best especially as a beginner, but there's beginners yoga on youtube (my yoga teacher friend recommended Lesley Fightmaster) or there's apps (DownDog get high ratings).
