Mushrooms are the fruiting bodies of filamentous fungi that grow above the ground, have long been a part of the human diet, and used as both foods and medicine. They are considered as vegetables and have been informally categorized among the “White Vegetables” from a culinary point of view (Weaver & Marr, 2013). Mushrooms are considered as part of “Other Vegetables” by USDA’s MyPlate (ChooseMyPlate.gov) and ½ cup of mushrooms counts as ½ cup equivalent in the Vegetable Group (Other Vegetables subgroup) (USDA, 2020). Mushrooms are low fat, low calorie foods and are an important source of nutrients and bioactive compounds. Mushrooms are generally rich in many B vitamins, selenium, copper, potassium, and fiber. They can also be an abundant source of vitamin D when exposed to UV light. Mushrooms contain a variety of phenolic antioxidants as secondary metabolites.
Oh no! I'm loving Dr M Moseley's mushroom pizzas using Portobello mushrooms. No butter involved, grated onion & garlic, sliced tomato & just a sprinkling of grated low fat mature cheddar. Two and I'm stuffed 😋 .
Love 'em!! I grew up in a very small town which had a mushroom quarry. They were grown underground with artificial lighting - UV? My dad and other gardeners used to relieve them of their used compost for the gardens and allotments, still growing the mushrooms! Ate these at every meal for days before they were finally picked. Perhaps that's why we were all so healthy😁
Is that on a field or a quarry? 😮 I think my dad turned mushroom picking into an art form! Nothing unusual he would come off night shift and drive on to Salisbury Plain to pick mushrooms at dawn - luckily out of sight or shot of the army playing games!! He had a favourite couple of places where you could guarantee there would be lovely big field mushrooms. Then, like you, we would go again on Sundays!😃 life's simple pleasures!
I used to go to big sheds for 6am with a friend plus other ladies. We’d pick mushrooms from set sheds for the likes of M&S. and be allowed to buy some cheaply to take home. This was in Thakeham, West Sussex. The minimum you earned was £17. Xxx
I see! I dont think my mum bought a mushroom until the quarry shut down and Dad stopped going mushrooming so often! Mind you he always had his eyes peeled wherever we went on our outings in the season. He was a country boy!
I like them like that in a salad - my daughter always eats them raw! Yes, if we weren't looking for mushrooms, it was walnut trees, cobnut trees, sloes, crab apples for jelly, we were always looking for something - couldn't go on a normal walk!
I eat them raw too. There are a lot of different ones you can eat but you have to be careful picking them yourself . Shaggy Ink caps are good when young but I have a friend who ate some common Ink caps and had her usual drink with them and had a horrid reaction . Contain a substance that is used to treat a) alcoholics . It is stored in your liver and after you recover , feel better and have another drink it reactivates again. (This is not speaking from experience.) Giant puff balls are the nicest I've eaten when they are young before they stsrt to spore. There are enthusiasts who take groups out to local forest here in Autumn. Great fun - foraging. Very dependent on weather. I went on a weekend course in lake district once and the weather had been too dry so they had to go and buy varied ones from supermarket for the practical part of course in laboratory! Not often the lake district is too dry!
I used to eat all types of mushrooms 40+ years ago, then I had a bad reaction to penicillin and have not been able t eat them since. Even today I can become very ill very quickly if I eat anything with the tiniest mention of mushroom on the ingredients list. I am not anaphylactic but I am ill for days.
My father taught my brother and me to find mushrooms. We did not like them then and my mother would not eat anything out of a field in case it was a toadstool. I remember my mate Pauline and I finding some growing on the school field. Our class mates were horrified that we were going to take them home and give them to our dads. Dads were happy. They were country boys.
I'm doing a recipe from a new BHF recipe book-Portobello mushroom pizza-for lunch! I also did mushroom bourgignon the other day. Delicious and good fir heart ❤
