Fresh Garden Beets

Started harvesting the red beets today. The leaves are delicious and very nutritious Similar to Swiss Chard.

1 cup of red beets...

Calories: 44

Protein: 1.7 grams

Fat: 0.2 grams

Fiber: 2 grams

Vitamin C: 6% of thRDIFI

Folate: 20% of the RDI

Vitamin B6: 3% of the RDI

Magnesium: 6% of the RDI

Potassium: 9% of the RDI

Phosphorous: 4% of the RDI

Manganese: 16% of the RDI

For those with BP issues...red beets are a good source of nitrates which is converted to Nitric Oxcide in the body. Nitric Oxcide can help control blood pressure and possibly give a energy boost.

I never used to like beetroot as a kid, but now I have my Husband eating lots of salads etc.. But now we love them. Even baked like a fat chip (fries) lovely with a quiche !I

That's great...try roasting with carrots...delicious. I eat them plain in a salad or with goat cheese or feta cheese..find a good vingarette to compliment. Many ideas on the internet.

Carrots, feta and beets, oh my. Carrots, feta and beets, oh my. Put 'em up, put 'em up. I am just joking and know that you are a proud beet father. Very nice picture. I did not do a garden this year. It will be 108 degrees today and I am on a water meter. Got lots of tomatoes last year. I really don't care for tomatoes. If I didn't have a microwave I would die within 2 weeks. I baked bread and made mayonnaise many, many years ago. I have become a puppet of the agra business. The pharma business. The zebra striped politicians. The list goes on. My generation thought they would change the world, it didn't happen. I am glad you travel to the beet of a different drummer. The world needs you. But I ain't eating no beets. Or leftovers.

Thanks...I took up gardening when I was dx in 2019...the debates on nutrition and prostate cancer are manifold on this site. I'm just trying to add a topic of discussion that anyone can participate and add information we all can use as Stage 4 PCA members.

We eat them regularly though I tend to go with gold beets as often or more than the purple. I agree the greens are delicious but I rarely find them in as good of shape at the store as the ones in your pic. Enjoy!

I got some bad news this morning. My swiss chard was eaten by deer and my perpetual spinach which is in the same family is 75% gone also. I have a 6 foot fence that did not deter her. The chard, beet greens and the perpetual spinach are great sauteed and I add them to lentil soup.

My garden (In Michigan) is currently producing tomatoes, green beans and zucchini. My corn has tassels so it's a matter of time for that.

Love the beet leaf stems in stew instead of celery.. They hold up well and add lots of nutrients.

I agree...I would bet alot of people don't know the stems taste like celery and have the same texture.

I just toss the entire plant in my smoothie...not wasting any part of it.

After I clean the bugger real good...dirt eating days are long gone.
