chicken jollof rice (around the world dinners)

Evening all! I’m so pleased with the response I had to my two posts yesterday for my around the world dinners. Tonight we had chicken jollof rice for dinner and it was absolutely delicious! I would love to research these meals in more detail and give a sort of history about them on the future if anyone would be interested?

I also can write up a recipe if anyone would like to give it a try.
