Dinner..... Mega Omelette

This is a picture of 1/6 of the omelette made by my son for dinner today.

Contents for the whole meal are: 10 eggs, milk, seasoning, ham, diced sweetheart cabbage, tomatoes, leek, peppers, peas. With a red leicester/gorgonzola cheese topping. He also made a tomato sauce to go with it.

Carb free for him (type 1 diabetic) and LCHF for me. So everyone happy. Plus as we only ate 1/2 of it, we have tea for tomorrow already made.

Yes it gets better.... I didn't have to prepare, cook or even clear up. So one veey happy mum here. 😊

The tomato sauce looks really good, just like ketchup which I avoid, was it pureed tomato or anything added to give it consistency?

Basically it was pureed tomatoes and red onion. I dont know what else he put in it.

That sounds good, better than just tomato juice thanks. Just looking at the photo made me hanker for ketchup :))
