Evening all! I mentioned I was having an “around-the-world” week for dinners where I try out new cuisines and cultures. A few people were very interested in this & asked if I could show some pictures, and after figuring out how to post pictures, here we go!

(I also note I just discovered I can only post one picture so I am going to do two separate posts) This is what I had yesterday for dinner, gigantes plaki which is essentially Greek baked beans. I’m happy to share the recipe should anyone be interested.

Thank you! It was extremely tasty and my mum even had to shout up to me how delicious it was ☺️ that did boost my cooking confidence haha x

Gigantes Plaki is one of my faves - great with crumbled feta on top 😋 id love to hear your recipe as I usually go with whatever I can find online...

1. fry a red onion with garlic in a hot pan until translucent.

2. add crushed canned tomatoes and reduce to a simmer.

3. add the spice mix, stir occasionally and leave to simmer for 15 minutes.

4. add in canned butter beans and cook for another 5 minutes.

5. transfer to a baking tray (or continue using your pan if it’s oven-safe) and put in the oven at 180°C for 45 minutes to an hour.

6. garnish with parsley and serve! (you could have couscous, i had sourdough bread, or anything else you fancy as a side)

main ingredients: red onion, garlic, canned tomatoes, butter beans

spice mix: sumac, smoked paprika, cumin, salt, black pepper, oregano

This is now the second time this week I have come across sumac, sadly I cannot remember the recipe I was looking at when I first came across it as I passed on it due to the unknown spice but you now have me intrigued into looking for more recipes and finding the spice to try.

Sumac is a very underrated spice! I think it's mainly used in Middle Eastern and Mediterranean cooking. It has a great slightly citric taste. I can recommend it as a rub on lamb, or you could use it in an aubergine tagine.
