Here’s today’s rainbow salad:tomatoes, olives, red pepper, cucumber, lettuce, samphire, beetroot, avocado. Drizzled with lemon juice and avocado oil. 🥗.

It’s good with hummus, or cream cheese or cubes of baked tofu.

Looks great! Today I discovered that cold roasted squash is amazing in a salad (better than when it was hot!) :)

Ooh - that’s an idea 💡

As I write, I’m roasting bns to put into soup (other veg: onions, celery, garlic, plus stock & a small carton of coconut cream once I’ve whizzed it all up).

Ps I just looked at some of your beautiful photos on your other thread - what a stunning place The Channel Islands are! My former in-laws live in Jersey, so I used to visit a lot ☺️

Thanks, Dave. I aim to have a mixed salad every day either for lunch or tea (accompanied by some form of vegetarian protein eg eggs,cheese, tofu, hummus).
