Welcome; I feel for you. I am retired now but used to work ‘out of hours’ shifts and it was so difficult to have a sensible eating pattern. Everyone doing those shifts with me put on weight. It was the not knowing whether we were eating breakfast lunch or dinner!
Try to avoid the early morning snack to keep you going, which wasn't breakfast and was followed by proper breakfast at a reasonable hour. My only saviour was giving up shifts so I really know how hard it is.

My suggestion Bigmix would be that you forget about the idea of 'breakfast' 'lunch' 'dinner' 'tea' or whatever they're called in your neck of the woods. We do get rather stuck with those labels and then we think we need breakfast-y things for breakfast and so on.
Look at your week and decide when you will have your two/three meals each day. Plan and prep as best you can e.g. batch cooking so there's always a healthy meal in the freezer and make good choices about how you will fill a gap if you can't get a full meal when you're hungry: for something that's portable, I'd suggest a few nuts, some cheese, a hardboiled egg, maybe a full fat yoghurt with nuts, seeds and a few berries.
