I tried these today and they were really nice. Think I'm going to experiment with the best way to cook the pepper shells longer next time and mix cheese all the way through the stuffing instead of just on the top. Delicious.

I do stuffed peppers with mushroom, onion and cheese, and I plunge the pepper halves into boiling water and bring them back to the boil for five minutes, then drain. It softens them just enough without losing their shape, and they are still al dente.
You know the little lid things on the baking tray..? They came out nearly burnt but oh my gosh they were so beautifully sweet and tasty.
The shells weren't anywhere near as nice so I'm hoping to cook them much longer next time to get the same taste as the lids. I was thinking to pre-roast them a while before adding the stuffing.
Does part boiling them just help soften them up or does it help with flavour too?
They arenโt as sweet as when fresh, if you par boil them. I slice them lengthways so donโt have a hat to put on top. Mine are laid in a dish with grated cheese and half a bacon rasher, that goes crispy in the oven. Iโll put the whole recipe on when I have a minute.
I'm trying to achieve that really sweet juicy flavour I got from over-roasting the lids. I think I'll experiment with pre-roasting and see if I can get the same results.
can't wait, it has been so long I can't remember exactly when it broke, some time shortly before all the lock down stuff! I ordered it quite a while ago and it has taken ages to come back in to stock and get an installation date. Aug 12 is the big day for our 'socially distanced installation' How excited will we be?!?!!

I par boil my peppers too, before I stuff them. I donโt think it makes them lose flavour although you donโt get the roasted flavour. Love stuffed peppers!
